Curried Cauliflower Soup with Cashew Cream

I recently discovered cashew cream (instead of using regular cream) from the blogger Pinch of Yum over on Instagram. I made the cashew cream the other day to use in her creamy tomato sauce pasta and it was so good (you should try it!) and better yet, it was soooo easy! But I had about half of the cashew cream left over and I didn’t want the creamy cashew goodness to go to waste so I thought it would work well in a cauliflower soup I had been wanting to make. And what goes better with cashews than curry? They are made for each other, and quite frankly, cauliflower flawlessly cuddles up with those two perfectly as well.

I was thinking this soup is either going to be a complete miss or a complete hit. And from my perspective, it was a complete hit (otherwise I wouldn’t be sharing my fail, right?!). Even my picky 5 year old said she liked it (wha, wha??!!). My 8 year wouldn’t try it, but she is usually my food adventurer so I’ll give her a pass this time and say she was just in a stinker of a mood. Which she was. So here is the recipe to give it a try and I am curious what you think.

Curried Cauliflower Soup with Cashew Cream

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 tablespoon butter, cut into small pieces
  • 1 large yellow onion, diced
  • 4 cloves crushed garlic
  • 1 teaspoon curry powder
  • 1 teaspoon ground turmeric
  • 1 quart vegetable stock
  • 2 cups cashews
  • 2 1/2 cup water
  • salt and ground black pepper to taste
  • 2 tablespoons chopped fresh parsley or cilantro

Directions

  1. Heat Olive oil in a large pot over medium  heat. Saute onions in oil until soft, about 5 minutes. Stir garlic into the onion and continue to cook until fragrant, about 1-2 minutes more; season with curry powder and ground turmeric. Stir until combined.
  2. Stir chopped cauliflower with the onion mixture. Pour stock and 2 cups water over the cauliflower mixture. Place a cover on the saucepan and bring the stock to a boil. Immediately remove the cover, reduce heat to low, and cook at a simmer until the liquid reduces slightly, about 10 minutes.
  3. Puree mixture in the saucepan with an immersion blender until mostly smooth.
  4. In a blender, blend the cashews with the remaining 1/2 cup water. Blend until very smooth. Reserve half of your “cashew cream” in the fridge for another recipe, and add the other half to the soup pot. Stir until creamy.
  5. Stir cashew cream into the soup; season with salt and pepper. Ladle soup into bowls and garnish with parsley/cilantro and/or croutons if you have them.

Avocado Toast with Pomegranates

Hey y’all…I’m not from the south, but it’s such a warm and friendly opening, that it’s fun to use every now and then. Ok – back to my purpose here 🙂 I posted this beautiful pic last week on Instagram. I was craving some avocado toast, which by now, is familiar to most everyone who enjoys themselves some avocado. I do love a simple and straight forward avocado on toast sprinkled with salt and pepper and then drizzled with some olive oil. However, on this particular day, I was craving some comfort food for lunch with a bit of punch at the end. As luck would have it, I had some pomegranates to use up. Just sprinkle some on top and you have yourself an elevated avocado toast in no time at all. And it’s festive for the season. They would be great little appetizers at your next holiday party too! Just make mini versions 🙂

There really is no need for a recipe posted here, but just in case…Toast some good bread (I used Como bread, but a seeded wholegrain would be delish as well). Thinly slice some ripe avocado for your toast. Drizzle with good olive oil, sprinkle with salt, pepper and pomegranates. And the next most important step is to take a huge bite (if in the company of one’s own) and enjoy comforting yumminess of this fabulous combo!

Triple Berry Ice Cream

My seven year old has been in the kitchen lately and she is doing a fantastic job. I’m not sure if she has a knack for picking recipes or if it’s her cookbook The Silver Spoon for Children, but so far she has made some really yummy dishes. The recipes are super simple, yet with sophisticated ingredients that are familiar and liked by most people. Particularly children! And the illustrations are fun to look at too! I highly recommend this for your kiddos.

This triple berry ice cream is…how do I say this?…A.MAZING!  I can usually skip ice cream to save a few valued calories, but this is worth it. So worth it. Here’s the recipe in case you don’t go out to get the book. But really, the cookbook is worth it even if you are not a kid.

 

Triple Berry Ice Cream

Ingredients

  • 1 Cup Heavy Whipping Cream
  • 3.5 Cups of frozen berries such as blackberries, raspberry’s, redcurrants or blackcurrants (I used Trader Joes mixed berries)
  • Half a Lemon
  • 1 Cup Super Fine Sugar

Directions

This recipe makes enough for 6-8 people.
1. Pour the cream into a big bowl and using a hand whisk or electric whisk, whisk until it holds in soft peaks-when you lift the whisk out it should look like snowy mountains (if you whisk the cream to long it becomes firm & stiff).
2. Put the frozen berries into the food processor. Squeeze the lemon juice over the fruit, add the sugar and whiz until mashed up.
3. Spoon the mashed berries into the whipped cream and carefully fold everything together. Spoon into a freeze proof container (I used a bread load pan)), cover and freeze for 3 hours or until frozen.

 

Yellow Squash Cranberry Muffins

A few years ago I planted some yellow squash and it went gang busters in the garden. I made fritters with it, sauted it, roasted it, you name it. But I was at a loss of what else to do with it. So I found this recipe from CaramelPie and altered it to cut down on prep time and make them a little more healthful. And since the, they have been by far one of my favorite summer baked goods.

I just baked up my first batch of the season and they are just as yummy as I remember! Super moist, light and delicately sweet!

Ingredients:

15 muffins

  • 2 cups baby yellow squash grated
  • 2 eggs
  • 1cup melted butter
  • 1cup applesauce
  • 1cup sugar
  • 12  cup brown sugar
  • 2 cups whole wheat flour
  • 1 cup all purpose flour
  • 5 teaspoons baking powder
  • 1teaspoon salt

Directions:

  1. Wash squash, trim ends, and grate.
  2. Measure 2 cups of the squash, combine with eggs, butter, and applesauce, and set aside.
  3. Combine dry ingredients in a large bowl.
  4. Make a well in center of mixture.
  5. Add squash to dry ingredients, stirring only until moist.
  6. Spoon into greased muffin tins, filling 3/4 full.
  7. Bake at 350 degrees F for 18-20 minutes or until toothpick inserted in center of muffin comes out clean.

Chocolate Almond Spread – So Good!

Oh my goodness ladies and gents! Who doesn’t like chocolate spread?! And if you are like me, you would prefer a healthier version of the said “Nutella” version. This recipe could easily be used with hazelnuts for a more authentic Nutella taste, but I love it with almonds and so here is my version. It’s so easy to make (especially if you have a Blendtec or Vitamix blender) and you can eliminate some of the guilt when bribing your kiddos with some chocolate on their toast! Made with healthy coconut oil and almonds, it’s heavenly on toast topped with berries, sandwiches, inside/on top of muffins, used as tart filling, etc, etc. There is some sugar in there, but I reduced it as best as I could and still maintain some of the sweetness.

I’m trying to be good, but I can’t help but “clean” the knife when I am making the kids sandwiches! Stay tuned for a freebie Father’s Day card next week and take a peek at my Holiday card in the previous post…it’s up for voting on Minted (link to vote in post)!!! Eeck!

Ingredients

2   cups toasted almond slivers
12  cup coconut oil, melted
12  cup cocoa powder
1   tsp vanilla extract

3/4 cup powdered sugar

Directions

  1. Add coconut oil and almonds to blender and secure lid. Blend on a low speed for 15 seconds and then increase to a high speed for 35 seconds.
  2. Stir mixture towards center of jar, then secure lid.
  3. Blend on a medium speed for 50 seconds more.
  4. Add cocoa powder, vanilla extract, and powdered sugar to jar and secure lid. Blend on a medium speed for 50 seconds.
  5. Store in an airtight container in the refrigerator for 4-6 weeks. Bring to room temperature before serving.

Easy Zucchini Corn Pancake Recipe

So I’m in serious need of some good ol’ comfort food and I’m sorry, but I just can’t wait until the fall for it to be “acceptable” again to indulge myself in mashed potatoes, mac n cheese, mashed potatoes…I mentioned that one already didn’t I? That said, this is a comfort food disguised in a spring package! They are easy, flavorful, seasonal and down-right comforting. In fact I am eating some right now 🙂 Perfect for a quick throw together dinner or even make mini ones for an appetizer for a ladies night in.

Recipe adapted from King Arthur

 

Ingredients:

5 large eggs, beaten
1/4 cup olive oil
2 tsp salt
1/2 tsp ground pepper
1 tsp dried oregano
3 cups grated zucchini (about one large zucchini)
1 cup fresh sweet corn off the cob or frozen corn
1 cup shredded cheddar cheese (or your favorite cheese)
1 cup unbleached all-purpose flour

Directions:

In a large bowl, combine eggs, oil, salt, pepper and dried herbs. Whisk to combine.
Add the zucchini, corn and cheddar cheese and stir thoroughly with a spatula.
Add the flour and stir until thoroughly combined and there are no pockets of dry flour hiding in the batter.
Heat a large cast-iron skillet or griddle to medium-high heat, adding a very small amount of oil to the skillet/griddle. I used cooking spray to make it easy. Using an ice cream scoop, scoop 1/4-cupfuls of batter onto the skillet and flatten with the back of the scoop into a circle about 4 inches in diameter. Cook on each side about 3-4 minutes, or until a deep golden brown. Remove from skillet and transfer to a plate. Repeat with remaining batter. Serve warm with your favorite toppings.

Sweet Potato Chai Muffins with Coconut Oil

I’m a little surprised at how often I make muffins these days since I wasn’t a huge muffin baker in the past. But now that my kids are going to school in the mornings and need a quick breakfast that’s also wholesome, I find myself trying more and more muffin recipes. Who doesn’t get tired of cereal and frozen waffles every morning! We gotta mix it up and we leave the pancakes (unless I make extra and freeze them) and smoothies for the weekends.

I had sweet potato in the freezer the other day that needed to be used (here’s a HUGE tip…buy the frozen mashed sweet potato from Trader Joes! Just defrost and you are good to go!!) and so decided to make this recipe that originally used pumpkin and then I swapped out the butter for the coconut oil. Easy peasy! I personally like coconut oil in my muffins and my girls like it too, but it can make the texture a little denser. That said, I love the added flavor the chai tea brings to these muffins.

Sweet Potato Chai Doughnut Muffins Author: Adapted from Martha Stewart Ingredients

For the muffins: Makes 12

  • ⅓ cup milk
  • 1 bag chai tea
  • 10 tablespoons coconut oil
  • 2 cups all­purpose flour, plus more for pan
  • 1 cup whole wheat flour
  • 2½ teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon nutmeg
  • ¼ teaspoon allspice
  • ¼ teaspoon cardamom
  • ¼ teaspoon baking soda
  • 1¼ cups cooked and mashed sweet potato (pumpkin can easily be substituted)
  • ¾ cup lightly packed brown sugar
  • 2 eggs
For the sugar coating:
  • ¾ cup granulated sugar
  • 2½ teaspoons cinnamon

Directions

1. Pour milk into a mug or small microwaveable bowl. Heat in microwave 40 seconds until hot (but not scalding). Steep tea in milk 10 minutes.

2. Meanwhile, heat oven to 350 degrees F. Butter and flour 12 standard muffin cups. In a medium bowl, whisk flour, baking powder, salt, nutmeg, allspice, cardamom and baking soda until well combined.

3. Remove tea bag from milk, squeezing out any extra liquid and flavor from bag. Pour milk into a small bowl and stir in canned pumpkin until mixture is well combined.

4. In a large bowl or bowl of a stand mixer, beat oil and brown sugar on high speed 1 to 2 minutes. Add eggs, one at a time, beating well after each addition.

5. Using a spatula, wooden spoon or stand mixer on low speed, alternate stirring in flour (in 3 additions) and sweet potato mixtures (in 2 additions), beginning and ending with flour mixture, just until batter is combined.

6. Spoon batter evenly into prepared muffin cups. Bake 23-25 minutes until a toothpick inserted in center comes out clean. Cool muffins 10 minutes in pan on a cooling rack.

7. Meanwhile, in a small bowl, whisk together sugar and cinnamon. One at a time, remove muffins from pan then roll in sugar­cinnamon mixture. Transfer to cooling rack to cool completely.

Strawberry Milk – Moms, You Can Say “Yes”!!

IMG_4060IMG_4060What kid doesn’t want strawberry or chocolate milk? And what Mom doesn’t dread saying “no” to yet another treat? I had a lightbulb go off recently and thought, why not just blend strawberries with milk to make actual, real, authentic strawberry milk?! Seems so obvious, but a foreign concept at the same time. So I got out my try trusty blender, added some strawberries aaaaaaand…sort of bland 🙁 But I’m not one to get discouraged and waste perfectly good strawberries so easily. I ran my thinking hamster around in my head and decided a dash of (real) maple syrup might do the trick, but also keep the healthy factor in tact. And wouldn’t ya know?! It’s delicious and my daughter loves it. Store any extra in the fridge for a few days and pull it out for an extra special treat you can feel good about.

No recipe is needed really. Just add a container of strawberries to about 16-24 ounces of milk with a tablespoon or two of syrup, blend, and you are good to go! Enjoy being a cool mom once again!

Protein Packed Sunflower Butter Muffins…Yum!

IMG_3737Well hello again! I disappeared there for a bit over the Christmas break. I posted a few inspirations on Instagram, but I was otherwise engaged with hanging with the family folk for the last few weeks. I have to say, it was nice to slow down, not rush out the door and just hang in our jammies if we so chose. Not to give an entirely wrong impression that we did nothing but hang out in our pjs slothing about. We did venture out of our hollow up to visit the snow, downtown to see the gingerbread houses and then a dismal attempt at driving around to find Christmas lights and ending up in a gas station bathroom (ewe!!).

Now that the merriment of the holidays are behind us, we’ve stretched our pants to capacity and dawned our nightwear sufficiently during the day hours, it’s time to get back on track. Exercise, stick to a schedule and eat healthy…but still eat yummy food of course!! The Christmas cookies are in the past and I am inspired to start thinking of some healthier options for my little peeps that they will actually eat. So I went to my “High Protein Vegetarian” cookbook and found these bad boys that I hadn’t tried before. Partly because my oldest daughter only likes almond butter and my youngest only likes peanut butter…hmph 🙁 But a lightbulb went off last night and I thought of the all forgotten sunflower butter that I think is oh-so-delicisious, but hardly used. So with a few minor substitutions, I whipped these up last night while the girls were in bed. And the best part? they tried them for breakfast and they liked them! Yay! And I have to say I do too. Super yum with all sorts of healthy goodness in there to make a mom’s conscience rest easy.

Here is the recipe that was adapted from Veggie and the Beast:

Sunflower Butter and Chocolate Chips Protein Muffins

 

YIELD: 10 – 12 muffins (I only got 10)

PREP TIME: 10 minutes

COOK TIME: 15 minutes

TOTAL TIME: 25 minutes

Ingredients:

  • ¾ cup whole grain spelt flour (or whole wheat pastry flour)
  • ½ cup quick oats
  • ¼ cup wheat germ
  • 1 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup natural unsweetened applesauce
  • ⅔ cup creamy peanut butter
  • 3 tablespoons honey
  • 3 tablespoons dark brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ cup 2% plain Greek yogurt
  • 1/3 cup mini chocolate chips

Directions:

  1. Whisk together the flour, oats, wheat germ, baking powder, baking soda, cinnamon and salt in a bowl. Set aside.
  2. In another bowl, stir together the applesauce and peanut butter. Mix in the honey, sugar, egg, and vanilla, and then stir in the Greek yogurt.
  3. Slowly add the dry ingredients to the wet ingredients. Fold in the chocolates chips.
  4. Drop the batter into 12 lined and greased muffin tins.
  5. Bake at 350 for 15-18 minutes, until a toothpick/knife inserted in the center comes out clean.
  6. Allow to cool completely. Store in an airtight container. Since this is an oil-free quick bread, the muffin flavor and texture will improve overnight.

Soup Craze! Butternut Squash…Tomato…What’s Next Week?

IMG_3541I just finished up an evening with long time girlfriends. It’s our second annual gathering to wrap presents for an adopted family and I have to say, it’s something that I am so thankful we started last year and hope we continue for many years to come. I’m also wondering why we didn’t start it sooner?! Thank you Kelsey for kick starting us! It’s the least we can do for those in need, especially when we all pool our resources together and buy gifts for a family that needs a little extra help over the holidays.

Not only does it feel good to wrap presents for others, but it’s a great excuse for us to all gather together when our lives are so busy with our own families and children and activities. We get to chat, drink wine, and nibble while we wrap the gifts. I wish we could do this more often, but I will take what I can get!

A humble offering of soup seemed right for the occasion (plus I’ve been on a soup kick these last few weeks…tomato, pesto vegetable with orzo, cream of broccoli and potato leek), so I made a roasted butternut squash and parsnip soup topped with creme fraiche and parsley. Super easy…ahem…here is the tip that makes it so easy…buy the precut squash from your supermarket!!! Just throw your squash, parsnips and onion on a pan with some parchment paper and olive oil to roast and you have pretty much finished the bulk of the work. Shazzam!

Butternut Squash and Parsnip Soup

  • 4 Cups cubed butternut squash (approx. 1.5″)
  • 3 peeled and cubed parsnips
  • 2 medium onions cut in large chunks
  • 6 cups vegetable stock
  • 1/2 tsp thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp dried mustard
  • pinch of cayenne
  • salt and pepper to taste
  • drizzle of cream or half and half

Heat oven to 400 degrees. Spread the chopped vegetables on a parchment lined sheet pan tossed with a few tablespoons of olive oil and roast in the oven for 40 minutes or until soft. Place roasted vegetables in a large pot and add vegetable stock. Heat to a low boil and add remaining ingredients. Then using a stick blender (my preferred method), blend the soup until smooth. Serve and top with creme fraiche and parsley.

* You can easily substitute other vegetables for the parsnips, such as carrots, potatoes, etc.

Fresh Tomato Soup

  • 1 slice onion
  • 4 whole cloves of garlic
  • 3 tablespoons olive oil
  • 4 cups chopped fresh tomatoes
  • 2 cups vegetable or chicken broth
  • 2 tablespoons chopped basil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • pepper
  • 2 teaspoons white sugar, or to taste
  • drizzle of balsamic vinegar
  • drizzle of cream or half and half
  1. In a stockpot, over medium heat, saute the onion and garlic cloves for 8-10 minutes. Add broth and tomatoes and bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Add the chopped basil. Remove from heat and run the mixture through a food processor or use a stick blender (my preferred method) and blend until smooth.
  2. In a small pot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar, salt, balsamic, cream and adjust to taste.
