I made fritters with it, sauted it, roasted it, you name it. But I was at a loss of what else to do with it. So I found this recipe from\u00a0<a target=\"_blank\" rel=\"nofollow\" href=\"http:\/\/www.food.com\/user\/192264\" >CaramelPie<\/a>\u00a0and altered it to cut down on prep time and make them a little more healthful. And since the, they have been by far one of my favorite summer baked goods.<\/p>\n<p>I just baked up my first batch of the season and they are just as yummy as I remember! Super moist, light and delicately sweet!<\/p>\n<h3>Ingredients:<\/h3>\n<p class=\"amounts yield_unit\"><a class=\"yield\" data-toggle=\"modal\" data-target=\"#121853_yield\" data-popup-id=\"#121853_yield\"><label>YIELD:\u00a0<\/label><span class=\"amount\">15<\/span>\u00a0<span class=\"unit\">muffins<\/span><\/a><\/p>\n<ul>\n<li>2 cups baby yellow squash grated<\/li>\n<li>2\u00a0eggs<\/li>\n<li><sup>1<\/sup>\u2044<sub>2\u00a0<\/sub>cup melted butter<\/li>\n<li><sup>1<\/sup>\u2044<sub>2\u00a0<\/sub>cup applesauce<\/li>\n<li><sup>1<\/sup>\u2044<sub>2\u00a0<\/sub>cup sugar<\/li>\n<li><sup>1<\/sup>\u2044<sub>2 <span style=\"font-size: 12pt;\">\u00a0cup brown\u00a0sugar<\/span><\/sub><\/li>\n<li>2\u00a0cups\u00a0whole wheat flour<\/li>\n<li>1 cup all purpose flour<\/li>\n<li>5 teaspoons baking powder<\/li>\n<li>1teaspoon salt<\/li>\n<\/ul>\n<h3>Directions:<\/h3>\n<ol class=\"expanded\">\n<li>Wash squash, trim ends, and grate.<\/li>\n<li>Measure 2 cups of the squash, combine with eggs, butter, and applesauce, and set aside.<\/li>\n<li>Combine dry ingredients in a large bowl.<\/li>\n<li>Make a well in center of mixture.<\/li>\n<li>Add squash to dry ingredients, stirring only until moist.<\/li>\n<li>Spoon into greased muffin tins, filling 3\/4 full.<\/li>\n<li>Bake at 350 degrees F for 18-20\u00a0minutes or until toothpick inserted in center of muffin comes out clean.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>A few years ago I planted some yellow squash and it went gang busters in the garden.
